It's time to discuss Wisconsin-style Ale, Czech-style Pilsner, and a couple taproom exclusives:
Beautiful Science
Wisconsin-style Ale
5.2% abv
Inspired by some of our favorite beers from the Badger State, Beautiful Science was brewed exclusively with Wisconsin-grown ingredients, including malted barley, wheat, corn, and a blend of Cascade and Saaz hops. It is seriously soft, yet zippy, with rustic notes of citrus zest and midwestern grain fields.
Pastime Views
Czech-style Pilsner
4.8% abv
Pastime Views is our first true Czech-style lager, and it was brewed with the finest Bohemian Pilsner malt and a heavy dose of Czech Saaz hops. This pale lager sparkles in the glass and leaves behind some beautiful lacing. It's a symphony of noble hops with notes of lemon blossom, honey, and fresh bread.
Saison Never Sleeps (second bottling)
Ale aged in wine barrels
5% abv
This is the second batch of mixed fermentation Saison, which was aged in wine barrels with our house mixed culture, and then naturally-conditioned in the bottle for several months. We taste nuanced notes of crisp stone fruit and fresh hay, balanced by oak, a bright lemon acidity, and a fruit-forward Brett character.
Saison Never Sleeps is available in 750mL bottles in the taproom, while supplies last.
Character Development #2
Wee Heavy
9.7% abv
A Scottish-style Ale brewed with the finest Golden Promise barley and English speciality malts. Expect rich notes of toasted almonds, maraschino cherries, and caramelized sugar.
This is the second release from the Character Development Series, which is a collection of beers that receive extended conditioning time to develop soft and mature characteristics. Character Development #2 received a double mash, a long boil, and then many months to naturally-condition in stainless after fermentation (the remainder of this beer is currently aging in a blend of whiskey barrels).
Character Development #2 is only available on draft in the taproom.
